Chocolate Chip Cookies with Greek Yogurt: Revisited

This is one of my favorite recipes because I can literally make them by hand.  No mixer needed!
Of course, most cookies can be made by hand.  But these are especially easy.

Ingredients
-4 oz butter. soft
-1/2 c. granulated sugar
-1/2 c. brown sugar
-1/2 cup Greek yogurt
-1 tsp. vanilla
-1 1/2 c. all-purpose flour
-3/4 tsp. salt
-1/4 c. oats
-1/4 c. whole wheat flour
-1 cup chocolate chips

1. Place butter and sugar in a large bowl and use your hands (or a mixer if you're lazy) to fully combine the sugars and butter.  Add yogurt and vanilla and stir with a wooden spoon.
2. Mix all dry ingredients into bowl and stir with a wooden spoon.  Add chocolate just before fully mixed and stir.
3. Drop cookies onto a baking sheet and bake at 350 F until slightly browned on the bottom about 10 minutes.





Southern Style Biscuits

I like to call these "half-wheat" because I use half whole wheat flour and half regular all-purpose flour.

Ingredients:
-1 c. whole wheat flour
-1 c. all-purpose flour
-3/4 tsp. salt
-4 tsp. baking powder
-1/4 tsp baking soda
-2 T butter
-2 T lard or bacon grease
-1 c. milk + 1 T. lemon juice (or vinegar)

1. Mix all dry ingredients together in a large bowl.  Add fats and cut in with a pastry cutter until small clumps remain.
2. Add liquid in swift strokes and turn dough onto a floured surface.  Fold dough over on itself 3-5 times and press until 1 inch thick.  Cut into desired shapes and cook in a 450 F oven until browned, about 13 minutes.

Chocolate Diamant

This is one of those things that I can't stop eating.  "They're so good!  And so little!  I'll have another."

A perfect snow day treat.  They are really easy to make.

Aunt Hack's Chocolate-Orange Frosting

I recently made/modified a family frosting recipe.  Chocolate-orange frosting can't be beat.

Ingredients:
-8 oz. butter, soft
-8 oz. 10x sugar
-zest and juice of 1 orange
-cocoa powder to taste
-pinch salt

1. Cream all ingredients in a mixer until fluffy and use to frost immediately.

It's perfect on a dark chocolate cake.  With a name like "Hack" it has to be good.







Piped Sablè

Pipe these yummy sugar cookies in adorable shapes and enjoy with a cup of tea.

Finishes:
-jam
-dip in chocolate
-almond butter
-crystal sugar

Lemon Curd

I enjoyed making a lemon curd tart with Crème Chantilly, blueberry compote in a Pâte sucrée shell for my dad's birthday yesterday.  Lemon curd is definitely the new love.

Fruit and Nut Bars

I'm missing the leisurely breakfasts of old.  But I don't intend to wake up at 5 AM to enjoy one.  Instead, I'm making myself easy to eat, healthy breakfast options that I can eat at pastry school.

Heard of "Kit's Organic"?  They are great 5-6 ingredient bars that are delicious and expensive! So I made my own version.

All it takes:

-dried/pitted dates
-roasted almonds
-coconut oil
-raisins
-sunflower seeds
-any other dried fruit/nut or cocoa powder
-food processor
